About the Recipe

Ingredients
To grind
1 bunch of spinach leaves
½ cup coriander leaves
3 to 4 green chillies
2 cloves garlic
1 inch piece ginger
1/2 tsp cumin seeds
1/2 tsp coriander seeds
Veggies (steamed)
½ cup diced sweet potato
½ cup diced carrot
½ cup chopped beans
1 cup peas
½ cup cauliflower floret
½ cup diced green capsicum
For preparing masala / gravy
1 large onion (chopped)
1 large tomato (chopped)
2 tbsp lime juice
1 tsp garam masala
1/2 tsp cumin seeds
1/2 tsp cumin powder
1/2 cup thick coconut milk
2 tbsp oil for cooking
Preparation
In a mixer jar grind together all the ingredients listed to grind.
In a pan pour a tsp of coconut oil / ghee, cook onion and tomato with salt,When it’s soft enough switch off the flame and let it cool for some time. Put this to the mixer jar along with the green herbs and puree it to a smooth paste,
Now in the same pan add a tbsp of oil, splutter cumin seeds and pour the blended mixture to this and mix well.
Add 1 cup of water and cook it until the rawness of the masalas are gone.
Now add all the veggies and mix well.
Add garam masala,cumin powder and lime juice mix well.
Lastly add coconut milk and let it boil for one last time and switch off the flame.Garnish with mint and coriander leaves
Serve with Jowar or Ragi roti / Brown rice
