MUSHROOM BABY CORN THAI SOUP

About the Recipe

Ingredients

  • Organic Baby corn - 3 cups

  • White mushroom chopped - 1 cup

  • Red bell pepper- 1

  • Celery chopped - a handful

  • Onion chopped - 1 small cup

  • Garlic & ginger - chopped 1 tbsp

  • Baby spinach - a handful

  • Coconut milk - 200ml

  • Olive oil - 2 tbsp

  • A pinch of turmeric & Cumin powder

  • Salt as per taste

Preparation

  • In a large pot, heat oil & saute the chopped onion, garlic, and ginger.

  • Add fresh baby corn, celery, red bell pepper, mushrooms, and 1 cup of water , give it a good stir.

  • Simmer for 15 minutes. Add chopped spinach & coconut milk, stir for another 5-7 mins.

  • The soup is ready to serve.
