2 Cups roasted walnuts, divided
1 Cup gluten free flour
⅓ Cup all-purpose flour
1 ½ Teaspoon cinnamon
1 Teaspoon baking soda
½ Teaspoon salt
1 Cup coconut oil
1 ½ Cup coconut sugar
2 Tbsp flaxseed powder
½ Cup applesauce
2 Cups rolled gluten free oats
1 Cup white chocolate chips
1 Cup chopped dried apple rings
Preheat the oven to 350 degrees F. Coat two large baking sheets with cooking spray.
Grind 1 ¼ cups of walnuts in a food processor to a coarse texture. Add gluten free flour, cinnamon, baking soda and salt and process for 10 seconds.
In a separate bowl, beat coconut oil and coconut sugar on medium speed until creamy. Add flaxseed powder and apple sauce and beat until combined.
Add oats, the remaining ¾ cup chopped walnuts, white chocolate chips and dried apple into the mixture and stir with a spatula until completely combined.
Mix both the mixture together and combine it thoroughly.
Drop by heaping tablespoons onto the baking sheet, leaving 2 inches between each cookie.
Bake in batches. For a crisper cookie bake for up to 12 minutes. Let cool on the baking sheet 3 to 5 minutes before carefully transferring to a cooling rack with a thin metal spatula.
Serve it as mid evening snacks.
